Pea fiber is released when protein is extracted from peas. It consists mostly of easily digestible cell walls and starch.
In the process, peas are soaked and finely ground which breaks open the cells and fibers. Then, the pea protein is extracted and the fibers are compressed into pea fiber. The structure of pea fiber is very fine and contains many cell walls.
