What is shear in mixing?

With shear during mixing, high friction is exerted on the product. This can be created by shearing in the product due to the type of mixing process. Shear can also be created mechanically. Shear mixers mix and shred under a high energy density concentrated in a small area. This can be done mechanically by having a rotating knife beaten or cut into pieces at high speed with a “grinder”. In this case, the size of the clumps will decrease. The longer the mixing process takes, the more often the product has to deal with shear and the lumps will disappear further.
